Miami has become a sort of food truck hub, and it’s all thanks to the Burger Beast. In celebration of the launch of his Food Truck Tracker app 60 trucks came together on Friday. As the night continued more and more people came together to stuff their faces outside while enjoying some family fun. Never has Miami been more fed.
As soon as we spotted the new CubanCube we knew exactly where to start the night. It’s no news that Las Islas Canarias has the best croquetas in town. After trying their new food truck concept, it’s good to know they can also put those croquetas in between two soft, sweet buns, along with a little avocado along the way. And who can forget that maple bacon sauce?
Those croqueta sliders were both the first and best thing tasted that night. With so many options available around us, the entire night we were left craving that Cuban concoction. Even to the next day we couldn’t help but open the Food Truck Finder and try to locate our new obsession on wheels.
The pork-filled Cuban cigar was like a Cuban egg roll on steroids. Served with a sour tamarind sauce, this is a definite try from the CubanCube.
The three amigos was a trio of fried green plantain cups filled with a fresh shrimp ceviche. This was a light dish perfect to share with others. The shrimp tasted really fresh and the red onion gave it a great bite.
A visit to the CubanCube was a reminder of all the different flavors Cuban food brings. Cuban food has come a long way from your grandmother’s kitchen and thankfully this new truck has hit the road to bring locals a modern twist on the foods they already love.
